Can you believe the kids are back in school?! By now we are a few weeks into the routine and hopefully back to being lunch box pros! With the comfort foods of fall & winter around the corner I bring you Corn Flakes CrustedGrilled Cheese.
My take on comfort food always includes real whole foods and comforting healthy ingredients. For me, comfort food needs to satisfy the mind, body and taste buds in the healthiest ways possible!
This grilled cheese is the perfect meal for those busy school days when you don’t have much time to spend in the kitchen. Kids come home so hungry from long days of studies, sports and play.
This hot sandwich welcomes them home.
In this recipe I use our favorite sprouted grain bread.
I layer on some sharp cheddar cheese ~ use your favorite cheese please. Feel free to use a blend of your favorites too!
Crush up some Erewhon Organic Corn Flakes…
Heat up a pan with a pat of butter. Dip that grilled cheese sandwich in some whisked eggs.
Let your sammie roll around and frolic in those delicious crushed corn flakes. Pan fry it all up in that sizzlin’ pat of butter.
What you end up with is a ooey, gooey grilled cheese sandwich with a crispy corn flake topping. How fabulous is that?!
This makes a great quick lunch, dinner or snack. It is best served hot. Serve with a side salad and some fruit for a super duper meal.
You can also serve up your grilled cheese with homemade tomato soup, that would be great too!

Corn Flake Crusted Grilled Cheese Sandwiches
1 1/2 cups Erewhon Organic Corn Flakes, crushed
4 pieces of your favorite Whole Grain Bread (we love sprouted grain bread)
2-4 pieces (1-2 ounces) Cheddar Cheese (or your favorite cheese)
Butter or Ghee
2 Eggs, whisked with a splash of water or milk
Method
Melt butter or ghee in a frying pan over medium heat. Make a cheese sandwich. Dip your cheese sandwich in whisked eggs. Roll the sandwich in crushed cornflakes. Heat sandwich in the pan a few minutes on each side. Sandwiches should be crispy, lightly browned and the cheese melted.
